Cucumber Boats with Burrata Caprese

Summer’s knocking and fresh ingredients abound all around. These Cucumber Boats are sailing all the way to Capri with fresh burrata, tomatoes, basil capers and a drizzle of balsamic vinaigrette. YUM! 🇮🇹

Ingredients

  • 4 Cucumber small/medium
  • 1.5 Burrata large
  • 2 dozen Grape Tomatoes or substitute your favorite tomatoes
  • 2 tbsp Fresh Basil chopped
  • 1 tbsp Capers
  • 1 tsp Ground Black Pepper
  • 1/2 tsp Himalayan Salt
  • 1 tbsp Balsamic Vinegar
  • 3 tbsp Olive Oil extra virgin

Instructions

  • Peel cucumber. Cut the cucumber in half and scoop out the seeds
  • Fill the hollowed halves with burrata
  • Add the chopped tomatoes and basil on top
  • Whisk together the balsamic vinegar, olive oil, capers, salt & pepper in a little bowl and drizzle the dressing on top of your boats
  • Garnish with basil leaves
  • Serve whole or chopped in bite-size pieces. Enjoy!

Notes

I suggest adding the lemon juice at the very last moment, or serve with lemon wedges on the side. If added ahead of time, the lemon juice will make the whole thing soggy, altering the texture of the salmon.
