Cucumber Boats with Smoked Salmon

Ingredients

  • 4 Cucumber small/medium
  • 1 Cup Greek Yogurt or cream cheese
  • 6-8 Slices Smoked Salmon
  • 2 tbsp Fresh Dill
  • 1 tbsp Capers
  • 2 tbsp Scallion
  • 1 tsp Ground Black Pepper
  • 1 tbsp Fresh Lemon Juice

Instructions

  • Peel cucumber. Cut the cucumber in half and scoop out the seeds.
  • Spread on the Greek yogurt or cream cheese.
  • Layer the smoked salmon.
  • Sprinkle with capers, chopped scallion and fresh dill.
  • Add some black pepper and serve with lemon wedges on the side.

Notes

I suggest adding the lemon juice at the very last moment, or serve with lemon wedges on the side. If added ahead of time, the lemon juice will make the whole thing soggy, altering the texture of the salmon.
