I’m a carb addict and completely understand the pain of going gluten-free or, even worse, grain-free. BUT… These cucumber boats with smoked salmon are so tasty and satisfying, they totally make me forget about the bread stuff.
I ❤️ CUCUMBER BOATS
Cucumber boats are one of my favorite things to make and share. They are the perfect appetizer on a hot summer day, which here in South Florida is 350 days a year. They are so easy to prepare and versatile. I like to serve them at parties in small bites as finger food. I make different versions with all kinds of toppings, like these mouth-watering Cucumber Boats Caprese. A big plus is that they are naturally gluten-free, grain-free and absolutely keto-friendly, which will please many of your guests with dietary restrictions.
TIP #1 AIP SUBSTITUTION
Traditionally, I like the typical cream cheese and lox combo with the works. However, if you are currently on the AIP Paleo diet, and have not reintroduced dairy, leave out the cream cheese and also the black pepper. I recommend drizzling some extra-virgin olive oil.
TIP #2 GREEK YOGURT
About that cream cheese, for a more nutrient-dense dish, substitute Greek yogurt as I do. I promise it tastes just as rich and delicious, but you get the bonus of probiotics for gut health. Make sure to use thick plain Greek yogurt, though. Very important! Otherwise, you’ll have a weak liquidy spread, and your cucumber boats will sink in a sugary mess.

- Smoked Salmon
- Greek Yogurt (you can substitute cream cheese or even crème fraîche)
- Scallion (you can substitute chives or red onion)
- Capers
- Fresh Dill

Cucumber Boats with Smoked Salmon
Ingredients
- 4 Cucumber small/medium
- 1 Cup Greek Yogurt or cream cheese
- 6-8 Slices Smoked Salmon
- 2 tbsp Fresh Dill
- 1 tbsp Capers
- 2 tbsp Scallion
- 1 tsp Ground Black Pepper
- 1 tbsp Fresh Lemon Juice
Instructions
- Peel cucumber. Cut the cucumber in half and scoop out the seeds.
- Spread on the Greek yogurt or cream cheese.
- Layer the smoked salmon.
- Sprinkle with capers, chopped scallion and fresh dill.
- Add some black pepper and serve with lemon wedges on the side.
