No baking experience or special talents required. I’ll show you How To Make Lazy Paleo Pie Crust. All you need is a food processor and the right ingredients. Let’s go!

Easy Lazy Paleo Pie Crust

WHY LAZY PALEO PIE CRUST?

Because I’m listening! Since I started sharing my recipes on this blog, I’ve received grateful messages, but also requests for easy “doable” dishes that anybody can make. I get it and I hear you. Not everybody has the time or the desire to spend lots of time in the kitchen, making yummy stuff. For most of us, done is better than perfect. Especially, when we try to stay healthy and stick to ways of eating like paleo. Home cooking is a great way of taking control of our own health, using real ingredients and whole foods, deciding what goes into our bodies. However, without the time and means to actually do it, it’s just wishful thinking. So, for Pie Season, learn this great gluten-free, grain-free pie crust recipe. You can use it for sweet or savory pies, as it is a neutral crust. I’m using it today for a Paleo Pumpkin Pie, as tomorrow is Thanksgiving Day. Happy Thanksgiving, everybody!

INGREDIENTS FOR LAZY PALEO PIE CRUST

All real ingredients and no crap! I created a blend of flours using Cassava, Tapioca, and Almond. I used grass-fed butter (unsalted), but for a dairy-free version use organic palm shortening. Here is the complete list of what you need and where to find it (click on the ingredients for shopping links!):

  • Tapioca Flour
  • Cassava Flour (I highly recommend using Otto’s brand! Click on the ingredient for details)
  • Almond Flour
  • Himalayan Salt
  • Organic Palm Shortening for dairy-free crust or Grass-fed Butter
  • 1 Large Egg
  • Cold Water

HOW TO MAKE LAZY PALEO PIE CRUST

The expression “easy as pie” was created for this crust. What makes it especially easy and lazy is using a food processor instead of a pastry cutter and elbow grease to incorporate the butter (or shortening) one chilled chunk at a time. Kneading the dough in this recipe is quick and painless. In just minutes, you’ll have a perfect ball of buttery goodness to flatten into your 9-inch pie dish.

After that, you can flatten the dough between 2 sheets of parchment paper with a rolling pin and then finish the job using your hands.

Don’t worry if the dough crumbles and breaks while you work it. Remember, there is no gluten to keep it together. You will repair the wholes as you go with your fingers. Once it’s nice and flat, covering the surface of the dish, including the sides, poke holes with your fork. This will prevent it from bubbling when it bakes.

TIP: Poke holes in the bottom and sides, but not in the fold between the bottom and sides. It could cause the crust to break when you slice it. No big deal because your pie will taste good no matter what, but it’s better to avoid that.

LAZY PALEO PIE CRUST

Easy, quick, lazy paleo pie crust for savory and sweet pies. Let your food processor do all the hard work!

Ingredients

  • 1 cup almond flour
  • 1/2 cup cassava flour
  • 1/4 cup tapioca flour
  • 1/4 tsp sea salt
  • 5 tbsp butter grass-fed and chilled (or organic palm shortening for dairy-free)
  • 1 large egg
  • 1 tbsp cold water

Instructions

  • Cut the butter into small chunks (half a tablespoon each) and chill for 10 minutes in the freezer. Lay them on a piece of parchment paper, so they will not stick to any surface
  • Add the dry ingredients to a food processor and pulse for 1 minute
  • Add the chilled butter one small piece at a time (half a tablespoon at a time) and pulse the food processor a couple of times after every piece added
  • Add the egg and the water. Blast the food processor for 1-2 minutes until the dough is thoroughly blended
  • Remove the dough from the food processor and work it with your hands until you have a smooth ball (less than 1 minute). Flatten it on a board with a rolling pin, placing it between 2 pieces of parchment paper. Place the sheet of dough inside a 9-inch pie dish and keep flattening and pushing it with your hands until the bottom and sides are thoroughly covered and the dough is evenly distributed. Poke a few holes in the bottom and sides with a fork
  • Preheat the oven to 375 F. Bake for 15 minutes. Remove the crust from the oven. Now your ready to fill it!
